We’ve shared a lot of Açaí breakfast, sweettreatand bowl recipes with you, but today we’re going to shake it up a bit with a delicious, nutritious recipe perfect for lunch or dinner: Grilled Peach Salad with Açaí Balsamic Vinaigrette! Yes, it’s as good as it sounds. Keep reading to learn more about the ingredients behind this recipe and how to make it!
The base of this salad is spring mix lettuce; however, the real stars are peaches, avocados and walnuts. Peaches bring the salad a light and sweet flavor while offering nutritional benefits too. Peaches provide nearly 10% of the average daily fiber target making them good aids for digestive health. They’re also rich in Vitamins A and C. Avocados on the other hand, are packed with healthy fats that can help keep you full and satiated. They’re also just delicious! Lastly, you can’t forget to add some walnuts for that extra crunch.
Now for the dressing! Balsamic vinaigrette is a common, everyday salad dressing...so we thought we’d put a Sambazon twist on it with our Açaí. Not only is Açaí rich in antioxidants and omegas, but it’s absolutely delicious. Make this healthy dressing for your next potluck and you’ll have everyone begging for the recipe. We guarantee it! All you’ll need to make this dressing are the standard balsamic vinaigrette ingredients (balsamic vinegar, olive oil, and dijon mustard), a few extra spices, and of course, our Sambazon Original Açaí Juice. Grilled Peach Salad with Açaí Balsamic Vinaigrette
Prep Time: 10 Minutes | Cook Time: 10 Minutes | Ready In: 20 Minutes | Yield: 4 Servings
Ingredients for the Salad
2 Peaches, sliced
1 Avocado, sliced
½ Cup Walnuts
8 Cups Spring Lettuce Mix
Ingredients for the Açaí Balsamic Vinaigrette
2 Tbsp Balsamic Vinaigrette
2 Tbsp Olive Oil
½ Lemon, juiced
½ Tsp Dijon Mustard
⅛ Tsp Salt
Freshly Cracked Black Pepper
1. To make the vinaigrette, add all the ingredients to a bowl and whisk to combine. Set aside until ready to assemble the salads.
2. To grill the peaches, heat a grill pan on medium heat. Lightly coat with cooking spray and lay the peach slices on one side to sear. Flip and sear the other side, about 3 minutes per side.
3. To assemble, place a couple of handfuls of lettuce on each plate. Spoon a few tablespoons of the vinaigrette to drizzle on top of the lettuce. Add 3-4 grilled peaches, avocado slices and 2 tablespoons of walnuts per salad.
4. Drizzle with a little more vinaigrette if desired and enjoy!
